- Vinification: Cold pre-fermentation maceration takes place for 4 to 5 days. Traditional fermentation then takes place in stainless steel tanks, with the addition of selected yeasts and strict temperature control. This fermentation lasts 15 to 20 days, and once complete, optimal conditions are provided for spontaneous malolactic fermentation. Then, aging begins to achieve a pleasant wine. In this case, the wine is largely aged in French oak barrels and, to a lesser extent, in stainless steel tanks.
