- Vinification: Grapes are harvested overnight to preserve aromas and pneumatically pressed. The juice is transferred to stainless steel tanks for static cold settling (8 °C). After 24 hours, the clearest juice possible is extracted and inoculated with selected yeasts. Alcoholic fermentation takes place at a controlled temperature between 13 °C and 15 °C. No malolactic fermentation is performed.
