  • Aroma: Persistent sensation of bell pepper, typical of the variety, combined with vanilla notes.
  • Palate: Complex entry reminiscent of spices and bell pepper. Ideal with goat, lamb, and traditional spicy dishes.

  • Vinification: We take full advantage of the pyrazinic notes of our Cabernet, cold macerating the grapes at 8-10 °C for 4 to 5 days in stainless steel tanks. Selected yeasts are then seeded for alcoholic fermentation, which takes place at temperatures between 24 and 26 °C for 10-12 days. Spontaneous malolactic fermentation occurs. Oak aging for 6 months in stainless steel tanks.
