Vinification: The grapes for the base wine are harvested overnight to preserve aromas and maintain a fairly low sugar content, which will provide a base with good acidity. They are pneumatically pressed, sending the juice to a stainless steel tank for static cold fermentation (8°C). After 24 hours, the juice is extracted as clear as possible and inoculated with selected yeasts. Alcoholic fermentation takes place at a controlled temperature of 10°C.
The second fermentation then takes place in the long Charmat style for 6 months in contact with lees, thus achieving foam formation, producing a smooth, fresh, and very harmonious sparkling wine.
