- Vinification: Exhaustive vineyard inspections are carried out to select the best plot for this emblematic wine. Once harvested and crushed, a pre-fermentation maceration takes place for 4 to 5 days at temperatures between 8-10 °C. Following this process, selected yeasts are seeded for alcoholic fermentation, which will take place at temperatures between 23 and 25 °C and last an average of 15-20 days. Spontaneous malolactic fermentation is planned for oak barrels, which will be aged to achieve the perfect combination of fruit and wood that our wines provide.
